I really enjoyed this. It reminds me of a cross between a white cheddar and a Cooper cheese. It has a soft, almost buttery taste.

taste is 4 stars but it’s a little too crumbly for me texture wise. it’s a little sharp for me, but i can taste the rum, which adds sweetness under the sharp flavor. i don’t know if i’d buy it again. it’s better with crackers/prosciutto than fruit—the fruit & cheese together is almost too sweet. could be a good component for a cheese sauce. 3.5 stars, rounding up to be generous
