Midnight Moon is a matured, gouda-style cheese produced in the Netherlands and sold under the Cypress Grove label. Made from pasteurized goat's milk, the cheese is aged for six or more months to produce a dense and smooth ivory-coloured paste that develops a slightly granular mouth feel as it matures off to the 12 month stage. Flavours are of lovely brown butter with intense caramel undertones.Serve the cheese with Belgian Dark, Stout or Trippel or wines such as Syrah, Zinfandel or Sweet Sherry.The cheese has won Gold award at World Cheese Awards 2014, Best in Class, World Championship Cheese Contest, 2010 and Best New Product in Show, NASFT sofi Awards, 2002.

Rogue River Blue is an organic cheese made annually with the best cow's milk available, sourced from Rogue Creamery's organic dairy here in Southern Oregon's Rogue Valley. Each wheel has been cave-aged for 9 to 11 months and hand-wrapped in organic Syrah grape leaves that have soaked in pear liqueur.

Humboldt Fog is a goat’s milk cheese delivered by Cypress Grove Chevre, of Arcata, California, in Humboldt County. It is a mould-ripened cheese with a distinguishing layer of edible ash. The cheese ripens from the outside to the centre, resulting in a fresh goat cheese center surrounded by a pungent runny shell. This runny shell will widen as the cheese matures and is considered the best part of the cheese, by many. The bloomy mold and ash rind is edible, but is fairly tasteless. The cheese is creamy, light, powdery, slightly lemony and mildly goaty.
Humboldt Fog is available from a mini 1 lbs. cheese wheel (Humboldt Fog® Mini) up to the large 5 lbs. cheese wheel (Humboldt Fog® Grande).
 
The cheese has won the first place at the American Cheese Society in 1998, 2002 and 2005 and Gold at the 2014 World Cheese Awards.

Prairie Breeze is a well-aged white Cheddar style cheese and aged for a minimum of 9 months. It is made with vegetarian rennet with no added colour. The texture is crumbly yet creamy with a slight crunch from the calcium crystals developed during the prolonged aging. Flavours are medium sharp with some subtle grassy tones.

Bayley Hazen Blue is a buttery, natural-rinded blue cheese made from high-quality whole raw cow's milk. 

It is a Jasper Hill Farm product, named after an old military road commissioned by George Washington across the Northeast Kingdom. Brothers Andy and Mateo Kehler who own the farm, developed the recipe for Bayley Hazen Blue by altering the shape and aging process of a Devon Blue recipe from England, so that the cheese rind will hold up in usual retail conditions

The texture of Bayley Hazen Blue is firm and slightly dry than other blues. However, it is also dense and creamy, with well-distributed blue veins. The cream-coloured paste is characterized by deep, dark heartiness of pepper, tobacco and roasted hazelnuts set off by subdued grassy, nutty flavours in the milk.

Bayley Hazen Blue tastes beautiful with a glass of fruity red dessert wine, toasty Imperial Stout, or a chunk of dark chocolate. Pair it with a spinach salad, walnuts, and dried tart cherries to accentuate its flavour.

Mt Tam is a soft, triple-cream cheese made with pasteurized cow's milk, produced by Cowgirl Creamery, based in Marin County, California, United States. The cheese is a combination of organic milk and cream. Mt Tam is smooth, creamy and soft on the tongue and melts in the mouth instantly. This smooth and dense textured cheese is rich and buttery with hints of mushrooms, grass and hay. The cheese pairs well with a Champagne or a Sancerre.

Harbison is a Jasper Hill Creamery cheese named after Anne Harbison, the original contributor to the making of this cheese.

It is a soft-ripened cow's milk cheese with a bloomy rind, wrapped in strips of spruce cambium, which are harvested from the woodlands of Jasper Hill.  When ripe, Harbison has a very spoonable texture that continues to soften until consumed. It’s woodsy and sweet with lemony, mustardy, and vegetal flavours.

Oaked white wine or barrel-aged sour beers make great accompaniments. Also, don’t forget some fruit mostarda and crusty bread. The cheese is held together by the bark, which can be peeled off when it is a bit younger. However, with loosened cheese, it is better that the bark is kept as is and the portions are spooned out separately.

Willoughby is an exclusive Jasper Hill Farm creation, a creamery that not only makes cheeses but also offers cheese maturing caves for other Vermont based producers. The cheese was originally created by Marisa Mauro's Ploughgate Creamery, but after a fire in 2011, Jaspers resurrected the recipe and continue to make it at their farm.This washed rind cheese is made from pasteurized cow's milk. It has a semi-soft, buttery texture with occasional eyes and pale yellow-caramel paste. Flavours range from delicate milky, herbal, ripe-peach that advance into peat, roasted beef and onions aromas imparted by the rind.Willoughby pairs perfectly with a Rose, Saison beer or raw floral honey.
