Ash coated, pasturised English goats cheese
8 months ago
A light, creamy goats cheese coated in ash. Citrus and cream. Not much goat character which makes me think they have separated the males/females to reduce the hormone levels that lead to the goaty notes in the milk (as was explained to me by an Aussie producer). I like a bit of goatiness and funk. It’s more of a cheese for those who don’t like strong cheese, or for spreading on a cracker (I’d also suggest spreading on a slice of apple or pear, top with a basil or mint leaf and eat with a glass of Kiwi Sauvignon Blanc)
