Arpea comes to us from the Pyrenees region of France. It's a pasteurized sheep's milk cheese, but not at all like Ossau-Iraty. Arpea is a washed rind cheese, giving it a softer texture. The rind is slightly tacky and soft with a pliable but not runny paste. It has great robust flavor without the lanolin or wet wool flavors of some sheep's milk cheeses. If you like Taleggio, you'll love this cheese!
