Produced by Meadow Creek Dairy in the small town of Galax, Virginia, Appalachian is an artisanal cheese made using raw milk from their own herd of Jersey cows. It is a lightly cooked, pressed-curd cheese, aged for at least sixty days until the wheels form a white coat of penicillium moulds to complement its unique flavour. The texture is velvety and melt-on-the-tongue while the taste is reminiscent of lemons with buttery overtones and a mushroomy earthiness.Appalachian goes excellent on a cheese plate or with bread. As it melts beautifully, it could be used with a variety of dishes. The cheese pairs well with a crisp white wine or smooth lager.

Mild sharpness, pronounced rind, creamy body, very mild astringent aftertaste.

Earthy, buttery, creamy, tangy like sharp cheddar, smooth. Purchased at Whole Foods during a seasonal carry on sale for 17.99$ a pound. Pairs well with thicker slightly softer flat bread-style crackers/biscuits.

Pairs nicely with a Cab. On the softer side of a hard cheese. Very smooth
