Alpe di Frabosa is an Italian cheese with characteristic aroma. It is made from fresh cow’s milk with cream. Aging procedure under skilled technique preserves scent of cheese. Usually maturation period can be as long as 90 days, a very tasty cheese & the further refinement are done to have the flavour of crust’s porcine mushroom. Crusty bread and a glass of wine served with slice of this cheese make a great combination for meal of herdsman, i.e. mushroom pickers. The specialty from the Italian Alps!
