Made from organic raw milk from the holsteins on the family farm, this is a firm, pressed and cooked farm cheese with washed rind. It is refined eight months on wooden boards from the farm. Its orange rind has an aroma of undergrowth and mushroom. Straw-colored and dotted with small holes, its firm but supple dough reveals complex flavors of fruit, hazelnut, honey and a rustic woody touch, as evidenced by the cheese.
